The title is actually all wrong ... well, almost ... this recipe has nothing traditional :) It is not a Mexican recipe. I made it up yesterday. I had to bring a salad to a hangout night with friends. I decided for a Mexican salad, I love it and it's been a while I didn't have any Tex-mex/Southern salad. Usually my go-to dressing is the balsamic dressing. It is extremely simple but it is my favorite. Sometimes, when my family bring over some real Aceto balsamico from Modena - it is to die for! - I only drizzle the balsamic on the lettuce leaves, a pinch of salt ... and that's it ! But let's get back to the jalapeño dressing: I blended it up with my Thermomix TM5, it came out very smooth ! But i think it is an easy job for any blender. The dressing is pretty hot but people who love heat may find it mild. It is not easy to judge the spiciness of food as standards vary frankly from one person to another. So just try it, and then adjust ... It has a wonderful refreshing light green color. It is flavorful and beautiful.
Ingredients Jalapeno peppers 3 Labneh and / or greek yogurt 450gr Lemon 1 Garlic 5 or 6 cloves Cilantro half bunch Water 1 cup Salt to taste Olive oil 0.75 cup
Let's do it
Wash, dry and burn the peppers on the smallest burner of the stove, approximately 10 minutes. If you cant do that for “technical” reasons, just burn them slowly in a pan.
Cut the stems.
Add all the ingredients to the blender and mix until smooth
It makes a big batch of dressing! So these quantities are good for around 15 guests.
If you want to be safe, start with one jalapeno and taste. Add the second one, mix it up and taste … and freeze the last jalapeno if you won’t use it. No waste.
This dressing can be kept in the fridge for 1 week.
